Recipes for the Runner: Dessert

No Comments on Recipes for the Runner: Dessert

I have good news, and I have bad news. The bad news is that this is my last installment of Recipes for the Runner. I will be ending my time at Running Warehouse to continue my education in San Francisco, so this is where I (tearfully) say farewell.

Now, I know what you’re thinking…and the answer is NO; this blog series is not ending. Cut out the food blog? Blasphemy. This is where the good news comes in. RW staff member, Juli, a wizard in the kitchen and an avid runner, will be taking over future installments.

I figure there is only one appropriate way to end any culinary endeavor. Dessert. Don’t worry, I’m not completely throwing your health to the wolves, considering I didn’t include the cheesecake and instead chose all berry-based creations. But, as runners, it’s important to realize that some of the best things for your body post-run are sugars, fats and protein, all of which can be found in the recipes below. In healthy amounts, certain desserts can fulfill the needs of your recovering body. So, join me in celebrating the end of an era with these tasty treats.

Triple Berry Summer Buttermilk Bundt

Compliments of Smitten Kitchen

Try pronouncing the name of this cake three times fast. This long title is well-deserved; the many components of this cake result in one of the most heavenly slices of goodness to ever grace your dessert plate. Considering I’m not normally a cake person, that’s saying quite a bit. What I love about this dessert is threefold:

1) It’s beautiful, inside and out, making it the ideal “occasion” cake.

2) It’s MOIST. So moist, you can hardly consider it “cake”.

3) It fits perfectly into summer with it’s berry-laden batter and festive appearance.

As a runner, you’ll love this cake for it’s replenishing sugar stores and for the benefits of the berries. And speaking of berries…you have the freedom in this recipe to choose either 3 or 4 cups of berries. I highly suggest four.

Swirled Berry Yogurt Popsicles

Compliments of Smitten Kitchen

This popsicle toes the line of what I would consider dessert material but berries and yogurt are undeniably a match made in heaven, so I’ll allow it in the club. With a minimal amount of sugar and honey, these will mainly be providing your body with protein from the greek yogurt and natural sugars from the berries. An added benefit of these tasty treats? The ice cold bar will be a delightful refreshment after a hot summer run.

Summer Berry Crisp

Compliments of Me

I make it my goal to ensure that every BBQ I go to has this mouth-watering dessert present. The great thing about this dish is it’s simplicity. It’s also quite adaptable, easily made with alternate fruits or adjusted to be gluten-free. Why would a runner eat it? The loads of berries in this dish (once again) provide anti-oxidants and heart-healthy flavanoids, the oats provide whole grain carbohydrates, and the nuts and butter replenish fat stores.
